Did someone say vegan sweet potato brownies? Yes! Did someone also say they are squidgy, delicious and so easy? Yes! Oh, and those picky eaters will never notice they have a nutrient dense vegetable in the? Um, yes!
If you follow my blog, you will know we love a vegan chocolate recipe in our house and are always experimenting with new recipes that our friends and family will never realise are dairy and egg free. Even better, these vegan sweet potato brownies are hiding some goodness inside.
They are super simple to make and work with freshly baked sweet potato, frozen sweet potato or sweet potato puree – whichever you have to hand. You can also make them gluten free very easily by simply substituting the flour.
These brownies can be whipped up really quickly if friends pop round, or are perfect for a BBQ dessert, or served warm with strawberries and ice cream. They are also a great way to sqeeze some extra vegetables into your kids if you have a picky eater like me! You can read my 7 top tips for picky eaters if you are in the same situation.
