How to make a chocolate digger cake (dairy free & vegan)

Last year, for J’s 2nd birthday, I made a Thomas The Tank Engine cake. The icing turned green because of the yellow dye in the dairy free spread and when someone asked J what his cake was, he said a car! So I as very happy that when I started researching how to make a digger cake, it looked a lot easier!

The great thing about this dairy free digger cake is that it doesn’t even need decorating – in fact it needs destroying…

It is so simple and effective. and I love it! I use a homemade vegan chocolate cake as the base but you could easily use a shop bought one too if you wanted to. The crumbs are Oreos which are a surprising vegan treat and the gold rocks add a nice bright touch.

I then added a couple of the many diggers we have lying around to bring the digger cake to life.

I had been looking forward to making a digger cake for months since I first saw the idea on Life With Baby Kicks

I am very pleased to tell you that it was just as easy as I was hoping and looked amazing. J absolutely loved it and everybody complimented me on it so one happy birthday boy and mummy!

So here’s how to make a digger cake…

All you need is:

1 chocolate cake (I use this amazing vegan chocolate cake recipe)

1 pack of Chocolate Cream Oreos

Minature diggers

Instructions:

Pull out about a third of the cake to make a big sloping hole.

Crush oreos finely and sprinkle them over the slope and the plate.

Place digger figures on top and around the cake.

Crush some more Oreos into larger chunks and place in piles or in the dump truck and digger buckets.

I also found some gold chunky sprinkles that I added on as well.

That’s it! Serve it to the three year old and stand back in awe…

This construction cake, complete with diggers and dump trucks is so easy to make but looks really effective. And it tastes great too! An easy digger cake option.

    How lovely. and Vegan too – I will need to use this recipe as making a vegan baby shower cake for a friend next month!! So will convert these to cupcakes! Very amazing!!

    Lucky boy having his mum make his cakes! It’s such a lovely thing to do and as he gets older it’ll be one of the things he remembers from his childhood – Mums homemade birthday cakes! This one looks really good, so effective and fun! Hope he had a great birthday Xx
