I’m writing this staring out my window at the beautiful sunshine over the fields. This morning I watched 3 Hares bounce around in the grass and soon I’m off to get the kids and take the dog for a walk. I do love living in the countryside! I hope you have been enjoying the sunshine too.
Unfortunately the week didn’t start so well as J ended up in A&E with his asthma. He was fine after a few rounds of nebulisers but I hate him having to go through it all.
Coincidentally, baby A had her first appointment at the respiratory clinic this week and while at the hospital we took the opportunity to feed her some peanut butter! She showed no reaction which is a big relief. I’ll be writing more about that and the LEAP study next week.
With the sun shining, I have picked out a few of your recipes that make think of sunny days.
I used to work on a cruise ship that would visit Jamaica every week so this Jerk Chicken from Strength and Sunshine brought all those memories flooding back.
This Smoked salmon and avocado with crunchy asian salad from Snack to the Future just looks so fresh and light that it would be perfect for a Summer’s lunch.
