Happy Cinco De Mayo!
Have I ever told you how I much I love Mexican food? I think, if I had to choose, it would be my favourite cuisine. When we first came back to the UK from New York 10 years ago, we really struggled to find good Mexican food. Things have improved greatly, but not in Bedfordshire! So, it’s still down to me to recreate some of my favourite dishes.
Fajitas are a regular in our house as they are a great midweek meal and easy to adapt for different diets. Mr C and I love a good quesdailla too but unfortunately, they just don’t work that well with dairy free cheese.
So, inspired by the tastes of Mexico, I have have made a fabulous top 14 free 7 layer dip as part of this month’s #freefrompicnics. I can’t wait to see all the other dishes as I love a good picnic almost as much as I love Mexican food!
