Rich, delicious and decadent chocolate brownies. Does it get much better than that? Well, actually yes because these are rich, delicious decadent vegan brownies. Dairy free, egg free, nut free and divine. Now that’s something worth shouting about.
If you are a regular reader you will know that I love chocolate and baking is one of my favourite things to do. Another one of my favourite things is the healthy fast food chain, Leon. They make a great chocolate brownie and share their recipe in one of their cookbooks (I’ve got them all!).
It’s the coffee and orange zest that are the secret ingredients. However, as it contains almonds and eggs, it’s not something I have been able to make for J and miss A.
So when Gourmesso got in touch and asked if I would like to collaborate on a recipe using their coffee, I knew exactly what I wanted to make. Does anyone need an excuse to bake brownies?!
These really are the ultimate chocolate vegan brownies and are nut free as well. The coffee and orange give them a great depth of flavour while the texture is fudgey but firm. Perfect with a cup of tea or served warm with some dairy free ice cream.
- 115g dairy free spread
- 170g caster sugar
- Zest of 1 orange
- 80g apple sauce
- 2tsp cofffe granules
- 2tbsp warm water
- 1tsp vanilla essence
- 75g self raising flour
- 55g cocoa
- Cream together dairy free spread and sugar. Add orange zest.
- Mix coffee granules with warm water and whisk in, along with apple sauce and vanilla.
- Sieve in self raising flour and cocoa and combine.
- Pour mixture into 10x6 baking tin lined with greaseproof paper. Bake at 180c for 30m-35ins
- Leave to cool before cutting.
