Ooh dairy free caramel! There’s a few foods I’ve missed when I’ve been dairy free – cheese, chocolate bars and sweet gooey things.
Most sweet gooey things, like caramel, are laden with dairy and sugar.
But this one is not!
This dairy free caramel recipe is soooo simple, has just one ingredient. It can be whipped up in minutes and is perfect for serving with ice cream, making desserts like my caramel apple streusel bars or simply eating straight out the bowl.
Medjool date dairy free caramel
Ingredients
6 Medjool dates (pitted)
150ml water
1/4 tsp salt (optional)
Method
Put the dates in a blender and add water. Pulse for 10 seconds and then out on high speed until smooth.
(You may need to add more water, depending how dry the dates and are looking for a thick apple sauce consistency. It’s quite sticky so you may also need to stop and scrape down the sides of the blender)
Serve immediately or store in the fridge fo up to 3 days.
