Garlic is in everything. OK, not everything, but when you are trying to avoid it, it definitely feels that way. Pick up any sauce in the supermarket and chances are garlic is an ingredient.
When it comes to garlic free pasta sauces your choices are limited to literally about two.
I’ve been quite wary of pasta sauces anyway since seeing a programme about how much sugar they contain but I kept buying them for convenience.
That was until I made my own and realised what I have been missing!
This tomato sauce takes minutes to make, is sweet, cheap and even hides some extra veg.
And there’s not a garlic clove in sight!
Garlic free pasta sauce
Ingredients
2tbsp olive oil
2 carrots, grated
400g can chopped tomatoes
3 sundried tomatoes, chopped
1tsp sugar
Handful basil leaves, torn.
Salt and pepper
Method
Heat olive oil and fry carrot for a few minutes. Add all other ingredients and season to taste.
Blend until smooth and warm through.

My little boy is on medicine that triggers allergies at any time, he is unable to eat anything with sodium nitrate/nitrite as it makes him vomit, that was fine it’s bad for you anyhow! But he has now started with the Allium allergy, garlic onions etc and this one is tricky I seem to spend my life reading labels and searching for recipes that are way too spicy or adventurous for his palate, so this sauce looks perfect I will give it try thanks.
