Flapjacks are a great dairy free, egg free treat but I worry that they are too full of refined sugar for J so I wanted to make a healthier version.
There fruity flapjack fingers are still sweet and the dates give them a caramel kick but they are also packed full of goodness. I have used a splash of golden syrup to add a bit of extra stickiness but you could use honey instead.
These make a great breakfast on the go, a good mid-morning snack for busy toddlers or a lunch box filler.
Fruity Flapjack Fingers
100ml orange juice
2tbsp golden syrup
Put dates in a saucepan and cover with orange juice. Warm on a low heat for 5mins until they can be easily mashed with a fork.
Add oats and golden syrup to mashed dates. Stir together and mix in cranberries and raisins.
Press into a 8×4 loaf tin and bake on 180c/gas mark 4 for 10-15mins.
Tip: These are quite soft so keep them in the fridge for a firmer texture
