I am always looking for quick and easy finger foods to make J for lunch so that we don’t get stuck in too much of a rut and these dairy free pizza pittas are perfect. They take just minutes to make, can be topped with whatever you have in the fridge and are great for a lunch or last minute dinner.
Using pittas is cheaper and more convenient than regular bases, they are the right size for kids and freeze well so you can defrost them in the toaster quickly when you need them. All in all I find they make the perfect little dairy free pizzas.
We recently discovered Mozzarizella dairy free cheese and think it is great for pizzas. I have struggled to find a soya based one that tastes good and this one is made with rice. It has a great texture and it melts well, looks like real cheese and tastes quite creamy too. You could easily serve it to dairy-eating children and they wouldn’t question the difference.
You can make a tomato sauce base or use a store bought one but for quick and easy dairy free pizzas we just use tomato puree which you can then throw some herbs or seasoning on. Tuna is J’s favourite so that’s our regular topping but chicken, ham or veggies would work just as well.
Topping of choice (we used tuna)
Dairy free cheese
Cut the pitta bread in half. Open up the pitta pockets and remove the thinnest side.
Tip: The thin sides are great to pop in the oven on a low heat and make pitta crisps for dipping
Spread the tomato puree, add topping and cheese and put under the grill.
Tip: Don’t not have the grill on too high as the pittas can burn quickly before the cheese has melted.
