I recently started a new weekly page to bring together some of the best Free From and Allergy bloggers and share recipes. I love hosting it and have found some brilliant new ideas. This recipe is inspired by two of them.
I made some Apricot and coconut energy bites from Hungry Little Veggie and thought they were a really moreish and healthy treat. However, I couldn’t convince my toddler to try them and thought a drizzle of chocolate might do the trick. Then Vie De La Vegan shared her Raw Bounty Bars which recreate the classic confectionery that has always been a favourite of mine.
So, I thought, if I could keep the great coconut and chocolate taste of these bars but add some protein and goodness from the oats and dates, I might be on to a winner. And I was right. Here is the result, and I love them!
Coconut crunch recipe
75g dessicated coconut
35g dates, chopped into small pieces
4tbsp coconut oil
30g dairy free chocolate
Soak the dates in boiling water for 5mins. Mix with oats and coconut. Melt coconut oil and stir into coconut mixture.
Line a loaf tin with grease proof paper and press the mixture firmly into the base.
Leave in the fridge for half an hour. Melt chocolate, drizzle over the top and return to the fridge to set.
