I might be a little late to the smoothie bowl party but that’s because, to be honest, I never really saw the point of them! Why would you have a smoothie in a bowl instead of a glass? And how is that a very filling breakfast? Well experimenting with this dairy free coconut smoothie bowl has converted me.
Firstly, I totally get the bowl thing now – it’s all about the toppings and texture. The coconut adds a delicious crunch while the blueberries offer a fruity burst. They also help it be much more filling but I’ve added oats to the smoothie as well to thicken it up, make it more satisfying and keep you full up.
You can play around with the toppings – other berries would be lovely, chia seeds or even nuts if you can have them. That’s the beauty of smoothies, there aren’t any real rules. I used frozen berries here as I always have some in the freezer and they help make it lovely and fresh but you could used fresh rasberries or strawberries – whatever you have in the fridge.
It is better to use coconut milk out of a can as it is thicker and more sumptuous but if you only have a carton, you can always add more oats to thicken it up. This is a lovel healthy breakfast that is quick to make and fun too. The kids will love to help and enjoy the bright, bold colour and being able to add decorations. It is also a great thing to whip up for Mother’s Day or a special breakfast in bed as it looks so pretty and inviting.
- 30g oats
- 120g frozen berries
- 200ml coconut milk
- Blueberries and coconut flakes to decorate
- Whizz the oats in a blender until fine. Add the berries and coconut milk and whizz again.
- Pour into the bowl and decorate with blueberries and coconut flakes.
