Hands up who likes sweet potato – me, me, me! I’ll devour them fried, baked, mashed and in pretty much any other  kind of sweet potato recipes and I love how good they are for you too.

Last week these vegan and gluten free sweet potato cookies from Gourmet Mum caught my eye. We made them yesterday, subbed the pecans for chocolate buttons, and they were a big hit – even J happily ate them!

So here are 9 more sweet potato recipes to use the wonder veg…

Sweet potato is great in soups and this chunky vegetable soup from Intolerant Gourmand is a classic winter warmer.

These Mexican roasted sweet potato cubes from Easy Peasy Foodie make a perfect side dish.

This Sweet potato gnocchi from Veggie Desserts is a lovely light choice.

And these Sweet potatoes griddled with mint, chilli and garlic are a weight watchers winner.

Treat yourself to something sweet with these gluten free, vegan sweet potato brownies from Le Coin De Mel.

    Love this round up Emma….. The sweet potato meatballs look particularly tempting. As do the Gnocchi…. although the link seems to be wrong (you may want to check it).

    After a bit of a break, I am trying to get back into blog mode and (without any motivation to cook anything for what seems like weeks), I have posted a bit of a GF guide to Barcelona which I have been meaning to write for months! Hope that’s ok as a link-up xx

    Sweet potatoes are so so good and versatile. I love adding one in ‘normal’ mash for a bit of colour and taste enhancement. I would never have thought of making cookies with sweet potatoes though: love this collection of recipes! xxx
