Lamb with red wine potatoes and olives

Serves: 2
  • 500g potatoes
  • 60ml olive oil
  • 120ml red wine
  • 2 lamb chops
  • 75g olives
  • 2 rosemary sprigs
  1. Wash the potatoes and slit across the middle both ways.
  2. Place in an overproof dish with olive oil and half the wine.
  3. Cook, uncovered, for 30mins at 180c.
  4. Add the remianing wine, lamb chops, olives and rosemary and return to the oven for 15mins.
  5. Serve to the one you love with a good glass of wine, and enjoy!
