Did someone say vegan sweet potato brownies? Yes! Did someone also say they are squidgy, delicious and so easy? Yes! Oh, and those picky eaters will never notice they have a nutrient dense vegetable in the? Um, yes!
If you follow my blog, you will know we love a vegan chocolate recipe in our house and are always experimenting with new recipes that our friends and family will never realise are dairy and egg free. Even better, these vegan sweet potato brownies are hiding some goodness inside.
They are super simple to make and work with freshly baked sweet potato, frozen sweet potato or sweet potato puree – whichever you have to hand. You can also make them gluten free very easily by simply substituting the flour.
- 100g dairy free spread
- 150g dark chocolate
- 200g sweet potato flesh or puree
- 100g soft brown sugar
- 1tbsp oil
- 100g self raising flour
- 25g cocoa
- Melt dairy free spread and chocolate in a saucepan. Beat in sweet potato, sugar and oil.
- Sift in flour and cocoa. Mix until combined.
- Pour into lined baking tin and bake at 180c for 20-25mins
These brownies can be whipped up really quickly if friends pop round, or are perfect for a BBQ dessert, or served warm with strawberries and ice cream.
