My favourite mornings are the ones we spend in our pyjamas, baking cookies and making a mess. When it’s just our little family, holed up in the house together, covered in flour and scraping the wooden spoon to lick the last of cookie dough off. These Valentine’s vegan biscuits with cranberries were created on one of those mornings.
One of the most popular recipes on the blog is for my My Mum’s easiest vegan biscuits and they are so simple and scrumptious that they are often my go-to recipe when J demands to bake something on a sleepy Sunday morning. The kids love rolling them in oats and they also work well being chilled and cut into shapes.
These biscuits use the same basic vegan biscuit recipe that we know and love with a fruity kick and splash of colour from the cranberries and a hint of warmth from the cinnamon. They are fun to make with the kids and make a perfect homemade Valentine’s Day gift.
- 85g caster sugar
- 115g dairy free spread
- 140g plain flour
- ½tsp vanilla essence
- 1tsp cinnamon
- 50g dried cranberries
- Cream together the sugar and spread until pale and fluffy. Stir in the vanilla essence and fold in the flour and cinnamon. Mix in the cranberries
- Chill in the fridge for 30mins. Roll out and cut into shapes.
- Bake at 180c for 15-20mins until golden.
