The weather is turning now and I’m starting to think about cosy nights in and comfort food.
These Jam sandwich flapjack bars are comforting and filling, without being heavy or unhealthy. We make them all the time but I have only just got round to posting the recipe as we usually eat them too quickly for me to set up a photo!
We eat them for breakfast, as a snack, in lunchboxes and picnics, as pudding…in fact some days I think we could actually live off them! Baby A. in particular, is always asking for more and knowing her appetite, she could probably devour the lot.
I love that they feel like a real treat but are much lower in sugar and fat than a regular flapjack so you don’t have the guilt to go with it. They are also super easy to make in one bowl and the J always helps me – mainly so he gets to lick the jam spoon though! You could vary the filling for a different flavour jam or even try chocolate spread or apple.
- 170g oats
- 150g flour
- 25g brown sugar
- 75g dairy free spread
- 75g apple sauce
- 70g coconut oil
- 1tbsp honey
- 1tsp baking powder
- 4tbsp strawberry jam
- Mix together all the ingredients, apart from the jam.
- Press half the mixture into the base of a 9x13" tin. Spread jam on top. Cover with the remaining mixture.
- Bake at 180c for 30mins and leave to cool before cutting.
