January is one of those months that doesn’t have many redeeming features. It’s grey, cold and we’re all poor and tired from distant memories of festive celebrations.
One thing that can brighten up the gloom though is some filling, frugal comfort food.
I love a meal that you can throw together, serve in a bowl and snuggle up on the sofa with, yet without the guilt of junk food.
I have written before about how much J loves Mackarel and so I am always looking for new recipes to use it in. Traditional kedgeree has always been a favourite of mine and with a few alterations this egg free Kedgeree is just as warming and wholesome and is also dairy free and white fish free.
Ingredients (serves 2)
125g cooked rice
Half an onion
½ tsp tumeric
2 large handfuls spinach
1 large handful peas
1 smoked mackarel fillet
3 spring onions
Lightly cook rice, drain and set to one side.
Dice onion and fry gently in oil. Once they soften, add tumeric and fry for a few more minutes.
