One of J’s favourite foods is mackarel – weird for a one year old I know! – so we eat it quite often.
It is healthy and full of so many good fats that I’m happy J enjoys it, but I have been looking for different ways to serve it.
This dairy free pate is a lovely alternative, can be whipped up in a few minutes and makes a great lunch or dinner party starter.
We have also grown beetroot for the first time this year and I have discovered that it is the perfect accompaniment to this pate. The earthiness cuts through the strong flavour of the fish and citrus, and provides a rich flash of colour too.
I serve this pate on toast and grate the raw beetroot on top.
Dairy free pate
(Makes 1 lunch serving)
50g smoked mackarel
3tsp soy yoghurt
Juice half lemon
1 small beetroot, grated
2 slices toast
Roughly break up mackarel and blend together with yoghurt and lemon to desired consistency. (I often just use a pestle and mortar as I like a chunky texture)
Season generously with black pepper.
Spread on toast and grate raw beetroot on top.
