I am on a morning mission. A mission to reinvigorate our breakfasts which have become boring and predictable.
I love having things that are grab-and-go so these apple oat muffins work really well. They are made with two large apples, a banana and raisins so a good fruit hit as well as being filled with protein. I also enjoyed using my new multi-coloured muffin cases!
Ingredients (makes 12)
175g plain flour
2tsp baking powder
55g muscavado sugar
2 large dessert apples, peeled and cubed
40g dairy free spread, melted
115g non-dairy yoghurt (1 adult sized pot)
150ml non-dairy milk
1 mashed banana
Mix together the flour, baking poweder, oats, sugar, apples and raisins.
In another bowl beat together the dairy free spread, yoghurt and milk. Whisk in the mashed banana.
Add the wet ingredients to the dry until combined.
Spoon the mixture into a lined muffin tin. Sprinkle each one with oats. Bake at 200c for 15 minutes.
