Warm kale, pomegranate & avocado salad #glutenfreevegnuary
 
 
Ingredients
  • Serves 2
  • 6 handfuls kale
  • 1 garlic clove, crushed
  • Half a red onion, chopped
  • 1 avocado
  • 2 tbsp pomegranate seeds
  • Dressing
  • 2tbsp honey
  • 1tbsp olive oil
  • Juice half a lemon
  • Salt and pepper
Method
  1. Ligthly fry the kale, garlic and red onion until warm.
  2. Transfer to a plate and add chopped avocado and pomegranate seeds.
  3. Whisk together dressing ingredients and drizzle over salad.
